Dans une casserole, versez l\u2019eau, le lait et le bouillon de volaille. Une fois fondu, r\u00e9alisez la pur\u00e9e selon le mode d\u2019emploi.<br>Coupez le jambon en fines lani\u00e8res. S\u00e9parez les jaunes des blancs d\u2019\u0153ufs. M\u00e9langez les jaunes ainsi que le fromage r\u00e2p\u00e9 \u00e0 la pur\u00e9e. Montez les blancs en neige tr\u00e8s ferme, puis incorporez-les d\u00e9licatement \u00e0 la pr\u00e9paration. Ajoutez le jambon.<br>Beurrez g\u00e9n\u00e9reusement des ramequins ou moules \u00e0 souffl\u00e9s puis versez la pr\u00e9paration. Les moules doivent \u00eatre remplis aux 3\/4.<br>Enfournez et laissez cuire environ 20 minutes sans ouvrir la porte du four, cela emp\u00eacherait les souffl\u00e9s de monter. Les souffl\u00e9s doivent dorer d\u00e9licatement.
