Les faire revenir dans une po\u00eale avec un peu d\u2019huile d\u2019olive jusqu\u2019\u00e0 ce qu\u2019ils aient rendu leur jus. Laisser refroidir. Pr\u00e9parer une b\u00e9chamel. Saler, poivrer et mettre de la muscade. Ajouter les d\u00e9s de jambon et les champignons. M\u00e9langer. Mettre de la pr\u00e9paration sur la moiti\u00e9 de chaque carr\u00e9. Parsemer de gruy\u00e8re r\u00e2p\u00e9. Refermer des feuillet\u00e9s en soudant bien les bords. Dorer au jaune d\u2019oeuf, faire \u00e9ventuellement des \u201cdessins\u201d au couteau.
