Hacher l\u2019oignon ainsi que les blancs de poireaux. Couper les \u00e9chalotes et la carotte en deux.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Porter \u00e0 \u00e9bullition 2 litres d\u2019eau dans un grand faitout,<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Y plonger les morceaux de viande Environ une minute<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">(blanchir la viande permet d\u2019\u00e9liminer les \u00e9ventuelles impuret\u00e9s tout en la rendant plus ferme)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00c9goutter la viande, la rincer sous l\u2019eau froide<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Jeter l\u2019eau de cuisson.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Replacer la viande dans le faitout rinc\u00e9<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ajouter l\u2019oignon et les poireaux hach\u00e9s, les carottes<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">les \u00e9chalotes, l\u2019ail, le c\u00e9leri et le bouquet garni<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Saler, poivrer et mouiller avec le vin<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ajouter de l\u2019eau pour que la viande et l\u00e9gumes<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">soient immerg\u00e9s.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Couvrir. Porter \u00e0 \u00e9bullition, Laisser cuire 1 h 30<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cuire les champignons coup\u00e9s et citronn\u00e9s<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Avec 30 g de beurre, 10 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pr\u00e9parer un roux blond :<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Faire fondre le reste de beurre dans une casserole<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Saupoudrer avec la farine,<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">M\u00e9langer vivement au fouet,<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Laisser refroidir<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Quand la viande est cuite, mettre la dans une passoire avec les l\u00e9gumes et r\u00e9cup\u00e9rer le bouillon de cuisson. D\u00e9layer le roux avec ce bouillon<br>Porter \u00e0 \u00e9bullition en fouettant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Retirer le bouquet garni<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remettre la viande et tous les l\u00e9gumes dans le faitout<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ajouter les champignons<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Verser la sauce<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">R\u00e9chauffer le tout 10 \u00e0 15 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Juste avant de servir<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">M\u00e9langer la cr\u00e8me et les jaunes d\u2019\u0153ufs<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Incorporer les \u00e0 la sauce en tournant sans laisser bouillir.
