Retirer du feu et, dans un bol qui s&#8217;adapte au-dessus de la casserole, m\u00e9langer le fromage \u00e0 la cr\u00e8me, le beurre et le lait jusqu&#8217;\u00e0 homog\u00e9n\u00e9it\u00e9.<\/li>\n\n\n\n<li>Ajoutez les jaunes d&#8217;\u0153ufs et la vanille. M\u00e9langer jusqu&#8217;\u00e0 int\u00e9gration.<\/li>\n\n\n\n<li>Ajoutez la farine et la f\u00e9cule de ma\u00efs tamis\u00e9e \u00e0 l&#8217;aide d&#8217;une passoire. Int\u00e9grez \u00e0 l&#8217;aide d&#8217;une spatule.<\/li>\n\n\n\n<li>Dans un grand bol, ajoutez les blancs d&#8217;\u0153ufs et le jus de citron. Battez \u00e0 l&#8217;aide de baguettes \u00e9lectriques jusqu&#8217;\u00e0 ce qu&#8217;ils aient pris un peu d&#8217;air. Allez ajouter le sucre petit \u00e0 petit sans arr\u00eater de battre jusqu&#8217;\u00e0 obtenir une meringue cr\u00e9meuse et sans bulles.<\/li>\n\n\n\n<li>Ajoutez petit \u00e0 petit la meringue au m\u00e9lange pr\u00e9c\u00e9dent et int\u00e9grez-la en effectuant des mouvements doux et enveloppants \u00e0 l&#8217;aide d&#8217;une spatule de cuisine.<\/li>\n\n\n\n<li>Versez le m\u00e9lange dans un grand moule \u00e0 g\u00e2teau ou \u00e0 biscuits. Placer le moule sur une plaque \u00e0 p\u00e2tisserie, verser 1 \u00e0 2 cm d&#8217;eau chaude sur la plaque et cuire au bain-marie pendant 30 minutes \u00e0 150 \u00b0C. R\u00e9duire \u00e0 110\u00b0C et enfourner encore 30 minutes. Enfin, montez \u00e0 135\u00b0C et enfournez encore 15 minutes.<\/li>\n\n\n\n<li>Une fois cuit, \u00e9teignez le four et laissez-le r\u00e9chauffer \u00e0 l\u2019int\u00e9rieur avec la porte entrouverte. Retirez-le du bain-marie et laissez-le reposer encore 15 minutes.
