Assurez-vous que le sucre est uniform\u00e9ment humidifi\u00e9.<br><strong>Faites chauffer<\/strong> : placez la po\u00eale sur feu moyen-vif. Laissez le sucre se dissoudre compl\u00e8tement sans remuer. Les bulles deviendront plus grosses puis plus petites \u00e0 mesure que l\u2019eau s\u2019\u00e9vapore.<br><strong>Recherchez la teinte dor\u00e9e<\/strong> : apr\u00e8s 4 \u00e0 5 minutes, le sirop prendra une belle couleur ambr\u00e9e. C\u2019est l\u2019\u00e9tape du caramel que vous visez.<br><strong>Refroidissez-le\u00a0<\/strong>: retirez imm\u00e9diatement du feu. Versez lentement la cr\u00e8me \u00e9paisse en fouettant continuellement. Soyez prudent, car le m\u00e9lange bouillonnera vigoureusement.<br><strong>Ajouter des saveurs<\/strong>\u00a0: Incorporer l&#8217;extrait de vanille et une pinc\u00e9e de sel jusqu&#8217;\u00e0 obtenir un caramel onctueux et soyeux.<br><strong>Servir et impressionner<\/strong>\u00a0: arroser de cr\u00e8me glac\u00e9e, de cr\u00eapes ou de tout dessert de votre choix.
